Why We Eat Whole Food




Soy Enamorado! It is my favorite phrase in Spanish. It is a beautiful word that translates even more beautifully. It means,"I am enchanted to meet you".

My husband and I have been married 6 years. I knew what I was in for. Even so, it is quite a challenge cooking for a man (whom I adore dearly) that is allergic to everything. When I say everything, I may be over-exaggerating, but only a little. We like to refer to him as "bubble boy". My usefulness in the kitchen and love for new challenges would thereafter prove very useful in my marriage to a man allergic to eggs, all dairy, pork, wheat (in excess), all nuts, seafood, certain beans, and lentils. What can he eat? That is the question, as that list is much shorter and easier to remember. Thank goodness I love to cook. However, two months ago, bubble boy decided to go on a 60 day juice fast, which after 4 days turned into 60 days of all raw food, and he did it! After 60 days was over, he decided that is how he would love to eat permanently with only some cooked whole foods, but mostly raw food and 100% whole food (okay 95-100%), which, being the junk food lover that he is, it isn't always easy.  Now I prepare mostly whole food meals, and try to satisfy that sweet tooth. and we are attempting this on a slim budget. 

Most people tell me they cannot do a plant based diet because fresh fruits and veggies are too expensive. Well, I hope to prove that theory wrong. Though we at times do like to splurge, as most people do, I will keep us on a tight food budget.

5 months ago I gave birth to a beautiful, healthy baby boy. The most amazing thing ever to happen to me. Of course, his fathers allergies to dairy and eggs have been so kindly passed down. Now mom is completely off dairy because it was intensely affecting bubble baby as it passed through my breast milk. So now I have to be careful too. Just a short history of why we eat a whole food diet.

Now...lets eat!
